    As agriculturists our jobs haven’t changed much from generation to generation but the way we do them sure has! Our roles as providers of the nation’s food and fiber and stewards of the land remain the same but just as we rely on new technologies to become more efficient as producers, we find we now need to find new ways to use them to communicate with each other.

    That’s why we have created this blog. Almost 60 percent of the population now depends on the internet for news and other information. The daily and weekly newspapers are still out there (and we still depend on them to reach thousands of Oklahomans) but for all of you who prefer the speed and convenience of electronic communications, this blog is for you.

    Let us know what you think and please interact on this site with your thoughts and comments. We are counting on you to let us know what you think and suggest things and ideas that will improve this site and provide you with the information you are looking for.

FFA and 4-H Cattle Grading Contest June 9 at Connors State College

Connors State College will host a Cattle Grading Competition for FFA and 4-H members on June 9, 2009 at the Warner campus. The contest is open to FFA Chapters across the state and 4-H clubs or counties in Oklahoma. Registration begins at 9:00 am. A cattle grading school will begin at 10:00 am with the contest following. The school will include a sampling of cattle types and grades as well as, an explanation of the grading sheet.

Cattle grading involves the selection and evaluation of cattle based on their age, weight, and expected meat quality. This evaluation affects market prices. There are several career opportunities for students pursuing jobs in this field. Exposure to these types of contests and skill improvement activities opens the door for students and introduces them to career possibilities.

Gary Bledsoe will select the contest animals, place the officials, and conduct the school. Mr. Bledsoe is an expert in this area and is with the Oklahoma State Department of Agriculture. He conducts several contests across the state for Oklahoma youth each year.

Registration is free and can be completed by calling the Connors State College Agriculture Division at (918)463-6265 or by emailing the number of contestants that will be participating to Debby Golden, Agriculture Division at goldend@connorsstate.edu .

Awards will be presented to the top ten 4-H members and top ten FFA members competing. Team awards will be presented to the top three teams in each area.

Recipe For June Dairy Month! Beefy Cheese Roll-Ups

Susan Allen, our Dairy Max friend, reminded me recently that June is Dairy Month. In honor of that fact we’re going to be including some great dairy recipes this month.

This week Susan has sent us a recipe that features both beef and cheese:

Makes 8

Ingredients
1 can reduced fat refrigerated crescent rolls
8 slices lean deli beef
8 Sticks reduced fat string cheese, cut into 4 pieces each
2 green bell peppers, sliced
2 medium whole fresh tomatoes, sliced, drained, and patted dry
8 fresh medium mushrooms, sliced
8 green lettuce leaves, shredded
2 tablespoons flour for work area
1 teaspoon poppy seeds

Let’s Get Rolling!
Preheat oven to 375 degrees F
1. Unroll each crescent roll on a lightly floured work area. Turn to coat each side of roll.
2. Top with 1 slice of beef then add 4 small chunks of string cheese. Equally divide the sliced green bell peppers, sliced tomatoes, and sliced mushrooms between the 8 crescent roll dough cut-outs.
3. Roll–up each one from the widest end side jelly roll style and form into a straight horn shape.
4. With a pastry brush, coat the top side of each roll-up lightly with water and sprinkle with poppy seeds
5. Place each horn 2 inches apart on a foil-lined sheet pan sprayed with non-stick spray.
6. Bake 12 -15 minutes until golden brown and puffy. Remove from oven, cool 1 minute, and equally top each with shredded lettuce.

Ag Loan & Grant Applications Due July 1st

Grant and loan application deadline for the next Oklahoma Agricultural Enhancement and Diversification program is July 1. State agriculture officials are urging all producers with innovative ideas to apply.

Agricultural diversification grants of up to $5,000 are available as well as interest-free loans in three categories: Cooperative Marketing Loans, Marketing and Utilization Loans, and Basic and Applied Research Loans.

Loans may not be used to purchase land, buildings or equipment. Eligible expenses include feasibility studies, business plans, legal expenses, consultant fees, product development and marketing.

Producers interested in either diversifying their current operations or entering some form of value-added or marketing venture are eligible. Producers or producer groups interested in pursuing forms of value-added enterprises or marketing cooperatives are also urged to apply.

Among other things, OAED loans and grants have been used in the development of a variety of agritourism ventures, biofuel projects and food processing businesses.

MIO Recipe of the Week: Pecan Pie

Pecan Pie

Many of us grew up eating homemade pies but really don’t have a clue how to make one ourselves. This week Kitchen Kimberly offers one of her original recipes for homemade pecan pie.

Ingredients:

3 large eggs
1 c. Griffin’s Original Syrup
½ c. granulated sugar
4 tbsp. butter, melted and cooled
1 tsp. vanilla extract
1 c. chopped Oklahoma pecans
Pecan halves for garnish, if desired
1 Deep Dish Pie Crust

Instructions:

Preheat oven to 400 degrees. Place pie crust in pan on a foil-lined baking sheet.

In a large mixing bowl, beat eggs slightly. Add Griffin’s syrup, granulated sugar, butter and vanilla; blend well. Stir in the chopped pecans, and pour mixture into pie crust. If desired, arrange additional pecan halves in a decorative fashion over pie filling.

Place a foil sleeve over edges of pie crust to prevent over-browning during baking. Bake for 10 minutes at 400 degrees, then lower oven temperature to 325 degrees and bake for an additional 20 minutes with the foil sleeve in place. Then, carefully remove the foil sleeve (I use tongs) and continue baking at 325 for another 20 minutes or until pie is set.

Allow pie to cool completely at room temperature, and then store in refrigerator. Enjoy!
