MIO Recipe of the Week: Spicy Oklahoma Caviar

SPICY OKLAHOMA ‘CAVIAR’
An Adapted Recipe by Kitchen Kimberley

This is a favorite dish at any gathering and one of the most healthy choices for any sort of dip or garnish. Best of all, it is one of the most simple dishes to prepare there is.

INGREDIENTS:
1 C red onion, chopped
1 green pepper, chopped
1 red pepper, chopped
1 clove garlic, minced
2 cans (15.5 oz. each) Griffin’s Black-Eyed Peas, rinsed and drained
1 can (15.5 oz.) hominy, white or yellow, rinsed and drained
1 C Maria Rae’s Salsa – use ‘Level 1’ for Mild flavor,’ Level 2’ for Medium flavor
salt and pepper, to taste

PREPARATION:
Combine all ingredients in a large bowl. Cover and chill for several hours, or overnight to allow flavors to marry. Serve with corn chips, tortilla chips, or simply enjoy as a side dish.
